Banana Muffin with Streusel Topping

Banana Muffin with Streusel Topping

Streusel:
1/2 cup chopped, toasted walnuts

1/4 cup old fashioned oats
1/4 cup brown sugar
2 tbsp. flour
1/4 tsp. baking powder
1/8 tsp. salt
2 tbsp. butter at room temp., cut into tiny pieces

Muffin:
1 1/2 cup all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 med. mashed ripe bananas
1 lg. egg
1/2 cup half and half
1/4 cup butter, melted
1/3 cup brown sugar
1 tsp. vanilla

Directions:
Preheat oven to 350 degrees.

To make streusel: mix walnuts, oats, sugar, flour, baking powder, and salt. Kneed in butter with your fingers until well combined.

To make muffins: sift flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a medium size bowl. In a large bowl, mix bananas, egg, half and half, butter, brown sugar, and vanilla. Wisk in dry ingredients until combined.

Divide into muffin pans and top with streusel. Bake for 25-30 minutes.
